Sweet Jam Frangipane Tarts




  • 6 ready-made tart shells (store-bought or homemade)
  • 1 egg
  • 1 cup almond flour
  • 7 Tbsp. butter
  • ½ c. superfine sugar
  • 1 orange (zest & juice)
  • 1 tbsp. vanilla paste (or extract)
  • ¾ c. Sweet Jam (bumble or rhubarb fig work great)
  • 1 c. Crème fraiche (for serving)


Preheat oven to 375 F

Lay tart shells on a cookie sheet

Combine egg, almond flour, sugar, & butter, adding orange rind & vanilla once mixed

Assemble tarts by putting a layer of jam in the bottom of each tart followed by a layer of frangipane mixture & repeat ending with a layer of frangipane on the top

Pop the tarts in the oven for 18 minutes (they should be golden when done)

Serve warm with a dollop of crème fraiche alongside each tart

Note: if you would prefer to make one large tart use a 9-inch pastry shell, reduce baking temperature to 350 F & bake for 25-30 minutes
