Sweet Pear Berry Meringue Tartlets


  • 4 readymade tart shells (store-bought or homemade)
  • ¼ c. sweet berry jam
  • 3-4 fresh ripe pears (or 1 15oz. can pear halves in juice)
  • ½ c. superfine sugar
  • 2 egg whites
  • 1 tsp. vanilla paste (or extract)
  • Vanilla ice cream to serve

Preheat oven to 375 F

Lay tart shells on a baking tray & divide jam evenly between them

Thinly slice pears (the thinner you slice them the softer they will become when you cook them) & lay over jam (you can grate a little fresh nutmeg on at this point if you like)

Whip the egg whites together with sugar & a pinch of salt to form a stiff and shiny meringue

Fold vanilla into merengue and spoon over tartlets

Bake in preheated oven for 6 minutes or until merengue is golden brown

Serve with a scoop of vanilla ice cream
